first days off with noooo car. and my friends...it has been glorious. the weather here in sb (what cool kids call santa barbara) is effing beautiful. so pretty much all that is different is that instead of waking up and road raging down the street. I am getting spoiled by morning walks filled with sunshine and a cool fall breeze. damnit.

it has been unreal, for example on my walk yesterday i walked by a customer that works at a massage place and she waved me in. and what??! a free massage? wow. yes please and thank you. i never get massages so I felt very thankful. (shoutout to marissa!) again spoiled. it literally made me feel high as a kite, in the best way. THEN i had lunch with my two favorite people. Surenuh (best friend) & Schmandty (boyfriend). we went to lucky penny, a cute restaurant cafe... 

walking around sb is giving me a new perspective on the town. i feel like I truly get to enjoy what it has to offer. i may not be able to drive to la and getaway for a day but what was a really driving away from? a cool ocean breeze? smiling bikers? flower covered walls? pretty content with my little walks around town. also, i am pretty happy about the extra slice of pizza I earn from all the cardio.

ranty rant: sad sunday & happy matcha

duddddde.

so first off, i changed my blog homepage to "skylarbryce" rather than simply "skyalamode" a while back because not everything i want to write is food related. most of the time i want to bitch and moan about all things related to well, ME. it's my blog... it's a purely selfish after work thing that i have. it may be semi-egotistical, a tad narcissistic but hey we all have that side of ourselves right? i am just a bit more up front about it.

ANYWAYYY, today has been weird. i feel insecure about EVERYTHING. to be totally honest i think it all stems from my parents taking my car away. alright, let's be real. it's not my car, never was. they bought it for me and wah wah they are taking it back because let's face it. i don't pay a damn thing for it besides gas and insurance. so i get it. not mad. i am a grown ass adult and if i have a car it should be one that i earn. just bleh "feels" because dealing with my parents brings up feelings of resentment and issues of my past that i have moved on from and like to keep buried in my "boohoo i am a victim box". i have two legs. i can walk. get a bike. man my butt is going to look GREAAAT. and plus i will be able to eat more and have more posts about ice cream and cake because exercise will no longer be an issue. haha literally loling at myself. I am not trying to sound like "one of those girls" but we all have our shit. we all have things we are trying to get through and this is one of my "things". okkkkkk. 

i truly am not that sad. but sometimes i get a bit dramatic and feel sorry for myself. but then i get over it and feel thankful for all that i have. we all have those days. it happens. just need to look at the positives, like the customer that complimented my hair, or a sweet kiss on the forehead after a rough day....i don't have anything else exciting to say... except i made the best matcha latte i have ever had at work today. see look at that world... movinnnn on uppp. get at me. order an almond milk iced matcha latte with vanilla made by your barista sky and your life will be forever changedddd. unless you don't like green tea (also I guess you don't connect with me and my super interesting asian background....) or you are allergic to almonds thennnn you will die. so don't do that. okay rant over. if you made it through that whole thing you must really like me, or be really damn bored. anyway, glad you did have a good night. i'm going to go eat something and make this "hangry" go away. lots of loveee babes. it's okay to pout sometimes!!

day off vibes: staycation

day offs post payday can be pretty exciting...disneyland, la coffee adventures and finding foodie wonderlands. however, day offs before payday can be pretty uneventful and boring because of how much you spent the week before. let's be honest, i am not a finance expert. i am twenty five and enjoy spending my money on nine dollar pour overs of kenyan coffee. and buying a new outfit every time i feel like "i have nothing to wear!'. i know i know i am a work in progress. but hey! i have someone in my life that showed me today that you can still have the best day off even when you don't have that comma in your bank account.

waking up today next to those big blue eyes, and that handle bar mustache that makes every man jealous. i thought....wow. then i thought poop...i have no clue what we are going to do today. got up and ready. and as soon as i finally got my winged eyeliner right (which most women know is in fact a thing) we were on the road. what could we be doingggg? i cant afford a fancy...well anything right now! well he took me to a coffee shop in the town over, carpenteria. we enjoyed espresso, pastries, an acai bowl and of course a diner mug of houseblend. we sat on a patio next to a really BIG tree in the sunshine. the air cool but the sun still shining. who would have thought that i've been driving hours for coffee and the coffee shop a tad up the 101 north would be just as wonderful without all the fuss of LA. getting coffee together is absolutely special to me because well first we work in coffee (it's how we met) and second because one of our firsts out of town dates was driving and checking out other coffee shops in other cities. nerdy and romantic. perfect.

alright what to do next, well was feeling a bit flustered about silly personal problemas..so OCEAN need to see it. something most cali people do when they need some peace of mind I promise. a little beach path hidden behind a railroad, takes you by some ridiculously large montecito mansions, fences and gates with vines growing up and over. bam. sand for days, glassy water, seagulls, dolphins jumping, ocean breeze and smiling people. gross right? perfectly perfect and everything i needed.

now next thing up....FOOOOD. yes always food. my days off usually revolve around it and that's okay thankyou very much! we go to a hole in the wall but very popular sammie shop "stackys seaside". it was beach themed of course as if the harbor threw up all over it (in a good way). fried chicken sandwich, and a pulled pork too. both split down the middle because i am a best of both worlds type of girl and i oh yes, have a boy who likes to share. (yay yay) both sandwiches were simple and delicious. fries were crispy on the outside yet hot and fluffy on the inside YUM.

it made me so damn happy... sometimes i lose touch with where i came from. i grew up right here in southern california, minutes from the beach. where i can lounge in the sun next to the man that I love, my skin gets all glowy as i watch dolphins swim. i need to remember that i am lucky to have grown up in such a beautiful place, and to keep exploring where i am and not always think about where i should be/could be all the damn time. it's the little things my friends. money is definitely not everything (even though some money is much needed for good espresso, acai bowls and living in santa barbara). but you get what i mean. enjoy life loves. oh and eat your heart out duh.

green chicken enchilada bake

dear, people that might be reading my blog that i never ever update...

sorry i am always MIA but hey i am busy doing things. starting to cook a bit more now because let's be honest when i am taken by a boy i automatically want to cook for him. and hey hey hey it's not because i want to be thaaaat girl. i actually am just a show-offey type, and i'm not afraid to be a bit braggy. i'm not good at too many things, i can't fix a car and i may not be very stylish but i do know my way around a kitchen. working with what i got here people!

so the other day a picked up the newest version of (muhh girl) martha stewart magazine looking for some inspiration. and tah dahhh found a cutie tear out recipe for a green chicken enchilada bake. of course i did my own "busy girl" version of the recipe by using a store bought roast chicken. but it turned out wonderful and in half the time!

i knew this recipe would be sooo tasty, not only because marthas name is on it, but any dish with fresh avocado, salsa AND tortillas has my so cal foodie heart in it's hands. also, i recommend using a cast iron pan if you have one because the edges get perfectly crispy and adds nice texture too. this recipe is insanely easy even after a longgg eight hour shift. or simply lovely for a night in with your boy/lady. ps make sure to hop in your pjs and bust out a fancy six pack to get some extra lovebird points!

Green Chicken Enchilada Bake--

2 cups cooked chicken shredded

12-15oz container green salsa (use your favorite)

12 corn tortillas quartered

3 cups grated jack cheese

s&p to taste

cilantro, avocado, radishes, limes and sour cream for garnish optional

preheat the oven to 350 degrees. shred your rotisserie chicken, toss with salt and pepper to taste, quarter tortillas. now layer ingredients in a 10 inch cast iron pan starting with the salsa, then tortillas, then chicken, then repeat until all three ingredients are used. make sure to end with cheese on top so it gets nice and cheesy. toss into the oven for 25-30 minutes or until cheese is bubbly and golden brown. while the casserole is in the oven prep all your garnishes. when finished. cut, garnish, serve and devour. you can do your own take on this too! feel free to add whatever you like. pasilla peppers or jalapenos would be delicious layered in as well. get creative or enjoy as is. okay okay onto the next thing...

ranty rant: my girl "s"

Laying in bed. Just planned another spontaneous trip to la la land with my favorite person. Pretty sure I've always wanted a friend named Serena.... It all started when my younger self discovered "gossip girl" and I watched episode after episode. Maybe I should start calling her "s" and she can call me "b"... My name isn't Blair but we could also start wearing headbands and preppy outfits... wait she would hate that. S is a very stylish lady! Ok ok going too far... Be kind to me please. Remember it's midnight and my half asleep brain is thinking that you all know what gossip girl is and think my reference is hilarioussss.

Anyway, I love having that "also single friend" that you can do anything and everything with... I was going to type "that you can waste time with", however to come to think of it we are doing quite the opposite. We are experiencing beautiful hilarious moments and I am meeting more people in these past few weeks than months in a relationship. I love being alone trust me. Netflix, a pint of cookies and cream, and my solidarity are necessary. However, I am happy that I have someone reminding me daily that it's okay to suck it up, put on a cute outfit, go out, be confident and live life to the fullest. Not saying I don't have those amazing taken girlfriends... They remind me that love is all ooeey gooey and definitely something to look forward to. Just for right now (and hopefully for a very long time)... S is one of the main ingredients for this recipe I call my life. Alright, time to dream of unicorns and movie popcorn. Good night babes. Gotta rest for the next thing.

cucumber tomato avocado salad

so i am a newly single, always hungry, sometimes lazy, twenty-five year old. i cook and bake all day at work so when coming home i don't always want to take the time to create a five star meal for one. lately, i have been in a bit of a funk so i either want to throw my head into a pillow and mope, or go workout cycling away my bad case of the feels. i am being a hermit of sorts when it comes to lunch time.... but a girl still needs to eat! so probably for the good of my health i have been forced to make big salads and have a healthy happy somethin' waiting for me in the fridge when I come home (no more daily burritos? darn). my top salad is something my mama used to make me, it's a cucumber, avocado, and tomato salad. this crunchy creamy wonderland is refreshing, flavorful, and easy to make. it's great as a side dish next to some grilled flank steak, as a salsa with chips, or just straight up fork to mouth. chop all the ingredients up and bam done, sad breakup tummy turned happy independent woman tummy!

---cucumber, tomato & avocado salad---

2 avocados, diced

2 cucumbers, peeled and cubed 

1 basket of cherry tomatoes halved

or 1lb roma tomatoes, diced 

half of a red onion, diced 

half bunch of cilantro, chopped

1tsp sea salt 

1tsp ground black pepper

2 TB good extra virgin olive oil 

juice of 1 lemon

chop/dice all of the above, throw it all into a bowl, add the lemon juice, olive oil, the s&p and toss together. tah dah turn on netflix and eat straight out of the bowl. uhhh i mean if you don't have anyone to impress that is...other wise put it next to some fancy grilled citrus shrimp and snap a pic! eat your heart out babe! -sky

 

salted chocolate chunk cookies

yesterday i needed comfort... i am not an emotional eater of any sort. however, baking is my comfort. i have  memories of whipping up (terrible) cookies with my older sister using bright yellow plastic bowls and a wonky handheld mixer.... eating the batter laughing while dad was still at work. baking reminds me that everything will be fine...  when I found out my dad was in the hospital yesterday I needed to remember that everything would be fine. i found myself rushing to the store, buying butter and a pound of dark chocolate. then cookies happened. the best chocolate chip cookies i have ever made. who needs therapy when i have a kitchenaid and can follow a recipe! plus.. I only ate two and they were mini! zero calories my grandpa used to say! these cookies are perfect, so much melty chocolate they will put you in a daze. make them, bake them, even freeze them for another day.

 

--sallted chocolate chunk cookies--

yields 18-24 tasty cookies 

1/2 cup unsalted butter 

2 T sugar

2 T raw sugar

3/4 cup + 2 T brown sugar

1 egg

1 tsp vanilla extract 

3/4 tsp baking soda 

1/4 + 1/8 tsp sea salt

1 3/4 cups all purpose flour 

1/2 lb dark chocolate rough chop

maldon salt to finish

preheat oven to 360 

cream butter and sugar for 5 mins

scrape sides of bowl, add egg and vanilla

add salt, soda, and flour

fold in chocolate by hand

scoop (with a #40 scoop) and bake for 11-12 mins. careful not to over bake. these guys are best when doughy!

portland: the b r u n c h

helllooo! welcome, to my fresh start/new beginning sort of a blog. keep coming back for drool worthy food pics and recipes... okay let's do this!

so i explored hot hot portland last week with some friends. yes my babes, HOT...hot as eff. no rain...no clouds...weird right? portland oregon has summers people and they aren't one bit gloomy. the furry beards are becoming mustaches and the skinny jeans are becoming cut offs.

when I travel to the great nw my daily routine usually ends up being... eat, drink, eat, nap, wander, eat, sleep. something like that. ohhh vacation is my favorite. it made me fat, but my nikes were happily waiting for me back home.

the next few days I will be telling you guys about the portland places I fangirl over. first... you need to start your day off right with breakfastttt duh. portland is killing the brunch game. you could get breakfast somewhere different every weekend. mimosas and bacon for days people... here are my top five that you should definitely check out next time you are in the area:

the b r u n c h

screen door: two words, chicken and waffles. the sweet potato waffle is perfect alongside the massive, juicy fried chicken breast... please go eat this, you won't regret it. pinky swear. then we can be best friends.

tasty & alder: this place is so special! it's not a snobby place where you feel uncomfortable. cool downtown vibe, family style brunch, quirky menu. boy said "best bloody mary he has ever had". Order the pork schnitzel! 

olympia provisions: this gem is hidden in the industrial area of se. search for it and you won't be disappointed. get a cocktail and order anything with meat. oh and for my inner fat kid... the bread pudding french toast... foodgasm.

tin shed: mmmm the potato pancake that comes as a side. and the bacon... god the bacon... you can also order beer for breakfast too! #yolo

petite provence: the buttery flakey croissants from the gods. they make all of their croissants and other french pastries in house... the breakfast is great too and the grapefruit mimosa is heaven...but the croissants... oohh mama get inside me!!

alright, so now I am starving... let me know your favorite spots to grub in pdx. next trip i will make it happen. mmm!
