salted chocolate chunk cookies

yesterday i needed comfort... i am not an emotional eater of any sort. however, baking is my comfort. i have  memories of whipping up (terrible) cookies with my older sister using bright yellow plastic bowls and a wonky handheld mixer.... eating the batter laughing while dad was still at work. baking reminds me that everything will be fine...  when I found out my dad was in the hospital yesterday I needed to remember that everything would be fine. i found myself rushing to the store, buying butter and a pound of dark chocolate. then cookies happened. the best chocolate chip cookies i have ever made. who needs therapy when i have a kitchenaid and can follow a recipe! plus.. I only ate two and they were mini! zero calories my grandpa used to say! these cookies are perfect, so much melty chocolate they will put you in a daze. make them, bake them, even freeze them for another day.

 

--sallted chocolate chunk cookies--

yields 18-24 tasty cookies 

1/2 cup unsalted butter 

2 T sugar

2 T raw sugar

3/4 cup + 2 T brown sugar

1 egg

1 tsp vanilla extract 

3/4 tsp baking soda 

1/4 + 1/8 tsp sea salt

1 3/4 cups all purpose flour 

1/2 lb dark chocolate rough chop

maldon salt to finish

preheat oven to 360 

cream butter and sugar for 5 mins

scrape sides of bowl, add egg and vanilla

add salt, soda, and flour

fold in chocolate by hand

scoop (with a #40 scoop) and bake for 11-12 mins. careful not to over bake. these guys are best when doughy!
