charred corn salsa

 

as we were strolling through the market someone approached us, they were so excited to see that we were using bon appetit magazine while we shopped. I thought this was especially cute because the reason we were using it was because I have been incredibly uninspired on what to make for dinner lately! I landed on a simple salmon recipe because you can’t go wrong with some cold salmon on a summer day. I also spotted their charred corn salsa recipe, and I don’t know about you but when I see corn salsa I think of chipotle and who doesn’t love chipotle? come on now, don’t be snobby! I scanned over the recipe and it looked easy peezy doable! so I gathered all of the ingredients and with the help of my love we created this sweet and tangy charred corn salsa. yes we then ate almost all of it on the couch while netflixing and chillin’ (do people still say that?). In my opinion the salsa could be spicier with maybe one more jalepeno but overall it is a winner. I will definitely be making this salsa all summer long and hey don’t forget the chips and margaritas bbs!

 

*charred corn salsa

yields two cups 

ingredients

2 husked medium ears of corn

1 poblano chile

1-2 jalepenos or fresno chiles

1/4 cup chopped red onion

1/2 tsp kosher salt

1 large ripe beefsteak tomato

1/4 cup clinatro leaves

2 TBSP fresh lime juice

steps

1. cook the corn and the chile in a dry meduim cast-iron skillet over high heat, turning occasionally, until corn is charred in spots and chile is blistered all over, 10-14 minutes.

2. let the corn cool, lay corn flat and slice along one side to shave off kernel. be careful! repeat, roating cob, until all kernels have been cut off. 

3. mash the corn to release the juices.

4. cut around chile stem to remove, then slice into flesh lengthwise to open up the chile like a book. scrape out seeds and ribs, flip over and then use the dull edge of your knife to scrape off the charred skin and discard.

5. chop the chile and add to the corn. add the chopped jalepeno, red onion and salt. mix well.

6. core the tomato, then cut half through and lightly squeeze out juice. chop the tomato and fold into the salsa.

7. add the chopped cilantro, fresh lime juice and salt to taste. 

that’s it! it’s so easy, now just enjoy with some tortilla chips, toss on top of a salad or some tacos. go wild!

magic "feel better" chicken soup

so i officially am obsessed with this cozy heart warming soup, it is fragrant with coriander, onion, ginger and is incredibly easy to make. i originally made this after a caught a terrible cold in june, now i make this not only as a cold remedy but whenever i need a little pick me up. seriously this soup makes me feel like a whole new woman! i snagged this recipe from bon appetit and have adjusted it so that it only makes about half the amount (mostly because this girl has yet to purchase a stock pot large enough to fit a whole bird hah!). this recipe takes a bit longer than heating up some store bought bone broth, but you get a lot more soup this route for a lot less money. i hope you enjoy this recipe. cuddle up on the couch with a big bowl of this magic soup and get rid of those colds this chilly season, nobody has time for that! 


turmeric-ginger chicken soup

serves 4-6 or enough soup for one person with a cold for about 2 days

ingredients

half of a 1 3½–4-pound chicken

1 medium onion, unpeeled, quartered

1 head of garlic, cut halfwise

1 2-inch piece ginger, unpeeled, thinly sliced

2 dried bay leaves

1 tbsp ground turmeric

1 tsp black peppercorns

1 tsp coriander seeds

kosher salt

2 carrots, chopped

dried udon noodles (if i am deathly ill i will skip the noods)

Chili oil (for serving)

steps

cut the chicken in half, save the other half for more soup at a later time or a roast chicken mmmm. place chicken and basically everything else (onion, garlic, ginger, bay leaves, turmeric, peppercorns, coriander seeds, and several pinches of salt in a large pot (largest you got).

pour in cold water to cover and bring to a boil over medium heat. reduce heat and gently simmer until an instant-read thermometer inserted into the thickest part of breast registers 155°, 30–35 minutes.

**i highly recommend a thermometer, it has changed the way i cook especially chicken! shout out to my mama for sending me one! you can get one here on amazon if you need one. trust! it is a lifesaver. protein is pricey and nobody wants to waste $$ on a dry bird.

transfer chicken to a plate and let cool slightly; keep stock simmering. remove skin from chicken; discard. pull meat from bones and shred into bite-size pieces; set aside.

return bones and carcass to stock increase heat and bring stock to a boil; cook until reduced by about one-third, 15–20 minutes. season with more salt if needed.

strain stock into a large saucepan; discard solids. add carrots, bring to a simmer, and cook until carrots are tender, about 5 minutes.

meanwhile, cook noodles in a large pot of boiling salted water, stirring occasionally, until al dente; drain and rinse under cold water to stop cooking.

divide noodles among bowls. add shredded chicken meat to stock and cook just until heated through; season stock with more salt if needed. ladle over noodles. drizzle with chili oil. (i highly recommend this step! it makes it truly pop and hey clears those sinuses too).

diy coconut milk

sooo I have never been completely "lactose intolerant". honestly, my milk alternative preference began as a trend when I was in my early twenties. i would add soy milk to my life cereal trying to be cool, eating craft mac n cheese an hour later.

about a year goes by and I learn soy isn't the best for balancing hormones, so I kicked soy to the curb moving on to almond milk for a very long time.

fast forward... I now live with my boyfriend who has a nut allergy. long story short I couldn't drink an entire jug of califia myself, so together we shared boxes of hemp or coconut milk. 

now we live in portland oregon and I began having major stomach problemas (a foodies worst nightmare). So I gave up dairy temporarily, ice cream and all... dun dun dunnnnn!

i want to be better about what I am putting in my body and get my gut back in action (fingers crossed by thanksgiving hah).

i already read labels and try eating clean but these days i'm a little bit of a (coco)nut ball about it. GET IT!? heehee

so I decided to skip the boxed alternative milks loaded with thickening agents and substances I couldn't even pronounce and make some milk at home!

i plan on exploring hemp and oat milk next but because I love anything that reminds me of hawaii...COCONUT milk it is. 

 

diy coconut milk

yields 2 cups/  1 pint jar 

2 cups warm water (heat up on the stove, not scalding) 

3/4 cup unsweetened shredded coconut (i purchase mine at whole foods for about $3.50)

pinch of sea salt

1/8 tsp vanilla OR 1/4 a vanilla bean

 

steps

-blend coconut and water together for two minutes

-strain with a nut milk bag (I used the organic cotton nut milk bag by eco peaceful)

-add salt & vanilla (optional, still delicious without)

-let cool and store in the fridge for up to 3 days

 

this milk doesn't have a very long shelf life that is why I make such a small batch but if you plan on using it up super fast I recommend doubling up.  ps dance & shake it up before you drink it, this milk tends to separate.

bonus--

boil 1/2 cup of milk and blend with your morning coffee and two scoops of collagen for about 1 minute for a frothy latte. soooo good I promise!

so i don't know if you know BUT i LOVE molly yeh. i discovered her food blog back in 2014 thanks to my stepmom and after reading countless posts molly is actually why i created my website. she was the first food blogger i came across that i could relate to. her being half asian, funny and super creative was exciting to my 24 year old self. if you have not been to her blog or instagram and you LOVE food just like me, you must check her out. anywho, a few weeks ago my friend paige sent me this recipe for the "most delicious meal she has ever made". clicking the link, i saw that the original recipe was created by MUH GURL molly. (wishing she was actually muh girl, but shh you get it).

today, finally i got over the fact that i had no idea what garam masala even was...bought some (located at your local grocery store in the spice section), and BOOM 40 minutes later i had the most delicious meal paige and now myself have ever made. it was full of flavor, had great texture, a little heat, and with the cool yogurt it brought it all together.

it was especially nice because juicy (my boyfriend/cute bearded artist man/real name justin) has a nut allergy, so we stay away from asian restaurants to avoid the dreaded epi-pen. NOW we can have date nights at home and pretend we are eating at a five-ish star spot without being scared of "poison" (what we call nuts). only bummer, was that i should have doubled the recipe. it was KILLER. thank you molly yeh for being adorable, talented and my most inspiring pretend friend. -skylarbryce

  • used yogurt instead of tahini (because i always have greek yogurt in my fridge)
  • did not make the zhoug (parsley cilantro mixture)

 

molly yeh's cauliflower shawarma tacos

serves 2 (very hungry people) or 4

ingredients:

cauliflower:

  • ¼ cup olive oil
  • ½ teaspoon kosher salt
  • 1 tablespoon garam masala
  • 1 tablespoon curry powder
  • 1½ teaspoons vegetable broth
  • 1 head cauliflower cut into florets
  • 1/2 medium onion
  • 2 tablespoons olive oil
  • 4-6 flour tortillas
  • ¼ cup fresh cilantro leaves, finely chopped (for topping)

tahini/yogurt sauce:

  • ¼ cup tahini or greek yogurt
  • 2 tablespoons cold water
  • 1 tablespoon lemon juice
  • kosher salt and black pepper

steps:

  1. make the tahini/yogurt sauce: In a small bowl, mix together the tahini or yogurt, water and lemon juice until the mixture thickens. season with salt and pepper to taste.
  2. make the tacos: Preheat the oven to 450°F.
  3. in a large bowl, mix together the olive oil, salt, garam masala, curry powder, and broth. add the cauliflower and toss to coat. spread the cauliflower onto the baking sheet and bake, stirring occasionally, until browned and crispy, 30 minutes.
  4. thinly slice half an onion. in a skillet, heat the oil over medium-high heat. add the sliced onion and cook, stirring occasionally, until browned, about 10 minutes.
  5. warm the tortillas. assemble the tacos with cauliflower, fried onions, yogurt sauce, cilantro.

easy pastry cream

hi hi people. so today was pretty exciting, i have been out of the baking game for a while now and i have been missing it dearly. at this moment in life i am at a crossroads of sorts when it comes to my career. luckily, there is no rush to decide but today i felt as if there was a sign from the foodie gods above. this morning i woke up unmotivated and bored...then suddenly someone messaged me on instagram asking for a cake! usually i would be like "ohmygoodness a cake for tomorrow? yeah right buster!) but not today! i was SO thrilled. i went straight to the store picked up the usual things and got to it. for the filling of most cakes i bake, i like to use a mousse, whether it be chocolate, raspberry or vanilla. pastry cream is a delicious concoction that adds a happy sweet surprise to any pastry.

some people might get intimidated when googling pastry cream recipes, i know i used to. i simplified the recipe i normally use so if you're hankering for some pastry cream this recipe is a breeze. you don't have to be baking a cake to enjoy this stuff. whip out some chocolate and berries and dip away. ;)

easy pastry cream

makes one cup (fills one 8 inch cake)

1 1/4 c whole milk

1/2 vanilla bean split

3 egg yolks

1/4 c white sugar

2 tbsp flour

2 tbsp corn starch

 

steps:

in a small bowl, mix together egg yolks and sugar. 

meanwhile, in a small saucepan bring milk and vanilla bean to a slight boil.  

take off the heat. to avoid curdling, add half of milk mixture to egg mixture while whisking. then add the combined mixture to the rest of the milk.   

put back on medium heat whisking vigorously until thick. about one minute. watch carefully or else it will burn!  

remove from heat, put into a tupperware. cover with plastic wrap so it's touching the pastry cream. this prevents it from developing a gross film on top. put in the refrigerator until ready to use. tah dah!

 

variations:

chocolate pastry cream- add melted chocolate while still warm.  

bavarian cream- add whipped cream when cool. 

raspberry mousse- combine Bavarian cream and raspberry compote.

chocolate mousse- combine chocolate pastry cream with whipped cream.

I know pasta isn't the best option for those trying to watch their figures... However, nothing beats eating a big bowl of pasta on the couch after a long day on your feet. I make sure to keep my kitchen stocked with some staple ingredients that make cooking dinner effortless and better yet stress free.

hi everyone! long time no blog...i know. but shoot how are you guys?? it's summertime and i hope ya'll are suntanning, playing in the ocean and most importantly...grilling!! I have had a nasty cold this past week, and it has been filled with many mugs of lemon tea and many long naps tucked into bed. and let me tell yah, i was craving some MEAT! so the babe and i snagged some sirloin, fragrant parsley, sweet corn and we were ready to GRILL! many of you do not know this but i am obsessed with bon appetit magazine. especially since i discovered the digital zine. OH MY LORD. i love flipping through a real magazine, but having access to all the issues handy on my ipad is so stinkin' cool. i can screen shot recipes, send them to my friends, and easily access recipes at the grocery store. love love love it!

in my beloved magazine (july issue 2016) i found this recipe for tri tip with chimichurri and it had me drooling. the bf insisted we try to re-create it and wow we pulled it off. we used sirloin instead of tri-tip because our grocery store was out, and honey instead of agave because I never use agave... but other than that I stayed true to the recipe. i was a little skeptical on sesame seeds being in the recipe for the steak rub but it really worked with the paprika. the steak was extremely flavorful and the chimichurri was refreshing for a hot summer day here in santa barbara. definitely going to make this again! it was 100% easy and ONE HUNDRED PERCENT delish. here is the link for the recipe below...

best chocolate cake

this chocolate cake is stupid good.

sadly, i cant take credit for it. darn you ina garten.

the only thing i changed was that i used coffee that we use at the coffee shop i manage (which is deliciouss).

here is the recipe. bake this...but make sure you make a mini cake for yourself because their wont be leftovers to take home after the party. i guarantee it.

best chocolate cake

makes two 8inch cakes

1 3/4 cups all purpose flour

2 cups sugar

3/4 cups good cocoa powder

2 tsp baking soda

1 tsp baking powder

1 tsp salt

1 c buttermilk

1/2 c vegetable oil

2 eggs room temperature

1 tsp vanilla extract

1 c hot coffee (i used a house blend from castle coffee roasters)

steps:

preheat oven to 350

prep two 8 inch cake pans, greased + lined w/ parchment

combine & sift dry ingredients

combine wet in separate bowl

add wet to dry

add hot coffee, do not over mix

pour equally into both 8 inch cake pans

bake for 30-35 minutes, let cool

 

chocolate frosting

makes two cups frosting

6 oz good semisweet chocolate

1/2 pound room temperature unsalted butter

1 room temperature egg yolk

1 tsp vanilla extract

1 1/4 c sifted powder sugar

1 tbsp finely ground espresso dissolved in 2 tsp hot water

steps:

melt chocolate, set aside until room temperature

beat butter on medium speed 3 minutes

add yolk + vanilla 3 minutes

add p sugar on low

scrape bowl!

add espresso mixture + chocolate

mix until blended but do not whip

 

frost as desired.

i like to spread a layer of frosting on one of the cakes acting as the filling, then stacking the other 8 inch on top. i cover the outside of both cakes with a thin layer of frosting acting as a crumb coat. then my favorite part is to top with chocolate ganache. which is equal parts heated heavy cream and chocolate combined. pour generously over the cake and serve. YUM!

i bought a basil plant the other day. i have absolutely no idea how to care for a basil plant. i know how to eat basil in various ways...but honestly that is all. so therefore this plant will probably die. sorry trader joes (and Mother Earth) but maybe you shouldn't tempt me with three dollar basil plants of cutenesss.

anywho, my first thought is to of course, duh buy this adorable plant. "i could make soooo much pesto!!!', i think to myself wide eyed, pushing an old lady out of my way. "you can get your artichoke after i grab my damn herb plant bishhhh... Jk i am no aggressive shopper...but maybe i had the tude because of my hanger... thinking of all the pesto ravioli i could be eating...oookay.

well i bought the plant, feeling all sophisticated.

but then bam. what the heck am i supposed to do with this thing??? ok ok i can handle this... replant the basil plant in my pancake batter dispenser? YESSS sky you are a genius woman! ps how pinterest of you... this basil plant just got even cuter. barf. 

ok ok ok done ranting. well ladies and gentlemen. i made pesto! and now my plant looks very sad...no longer killing me with cute. for some reason i thought the basil leaves would rejuvenate over night, but that is not the case. on the plus side, this basil plant will teach me patience. and in the mean time i will enjoy my pesto and try my darnest to keep this baby alive. 

pesto has a special place in my heart and it is incredibly easy to make. my mom made this for my stepdad a million years ago and he was instantly smitten. she then taught me to make it and as an adult i tried her trick on my boyfriend... worked like a charm (he's hooked). we now make it together almost once a week...watching him use my little pink food processor is ridiccccculously cute.

pesto is delicious & stunningly beautiful.

AND i believe that i have finally perfected it so i must share. applause*

spinach basil pesto- 

yields one cup

1 cup fresh basil

1 cup spinach

2 lg cloves of garlic

1/3 cup pine nuts

1/3 cup olive oil

**1/4 cup grated parmesan  

salt & pepper to taste 

toast pine nuts over medium heat until golden brown and set aside. food process basil, spinach and peeled garlic until finely chopped. add 1/4 cup pinenuts (save some for later) and olive oil. puree until well combined. fold in the remaining pine nuts. S&P to taste. toss with fresh pasta, veggies, quinoa or spread on toast. 

** i am sensitive to cheese so i usually grate a little parmesan on top of my pasta dish. if you are a cheese lover definitely stir in 1/4 cup of grated parm into the pesto when adding last of pine nuts.

here yah go! make this pesto, get stinky garlic breath, scare away boys or impress all of your loved ones.

food find: grandmas tamales

if you are ever in the Santa Barbara area do yourself a favor and catch the farmers market on the intersection of Santa Barbara street and cota. It runs from 8am to 1pm and it is probably the best farmers market I have ever visited so far, fresh veggies, hummus and beautiful flowers. BUT the best part is GRANDMAS TAMALES a cute little truck parked on the corner that sells tamales, chips and soda. shoot. I grew up in Oxnard so I know a good tamale. And these are no joke, authentic & amazing. Choose from pork (my favorite pictured above), chicken or jalapeño cheese tamales. They are $2.75 each and come with two types of salsa. Careful the red is SPICY hot, and the green is theeee best! It's Saturday, treat yourself get two of each tamale and share with a friend (or not)! If you're lucky you will get to meet grandma herself, dishing up tamales standing on her little stepping stool.

ranty rant: how to be single

Hi hi! I have been so busy working and ehh lets be honest I've been procrastinating.

Today I spent a day to myself. Which was much needed.

Got a facial, saw a movie. "How to be Single" to be exact.

This movie was pretty silly, boob punches and all.

One thing is for sure, it did get me teary eyed.

It reminded me of two very important years of my life.

My single years. The very single years....

I definitely knew how to be single.

Boys were easy and oh boy did I think I was great.

 

Well I was...and Pinterest which I was addicted to circa 2013, would always tell me "you need to love yourself before anyone else can". What a pal. If you saw my photo stream back then you would be speechless by all the images that looked something like this..

I miss being single.

HEY I do NOT want any of you to think that I am unhappy in my current relationship.

It's just thinking back...the moments I spent single were some of the best times of my life. And I know most of you can say the same. These times weren't always packed full of hot sex and sequin dresses. Many days I spent crying looking out at the ocean feeling like I would never be enough.

Throughout the good days and the bad I learned how to function alone and how to truly love myself. I will always cherish that magical time of feeling like I would never have that special person... So might as well just love the shit out of my self.

My single years are reminders and guidelines that I use in all my relationships today.

When I'm feeling needy as fuck. 

I think back on all of those nights where I just had "the walking dead", my very own bed and my very own brain to entertain me. 

everything is going to be okay. 

I am my own best friend.  

I am my own lover.  

I am all I need.  

If I jumped relationship to relationship I would have never started to do things on my own.

After a break up some people search for that perfect person. After my five year relationship ended, I searched for myself. My self esteem was at the lowest low, I was at my heaviest weight and miserable all together. I wanted to figure everything out. Do things out of my comfort zone, the things that I always wanted to do. See a movie or dine at a restaurant by myself. Go on hikes, get a gym membership, lay at the beach and write in my journal. I no longer needed a man or a friend with me at every moment. I learned to be alone. I learned that I don't need anybody but myself.

 

Don't get me wrong, I love my friends and my boyfriend.

Except now the difference is that I WANT them....I don't NEED them.

I want to be surrounded by people that I choose, that I love and that love me in return.

I don't want false relationships, or a boyfriend that I only keep around because I feel unlovable.

I know I can be alone, I love to be alone.

I just happen to adore someone's company and I am going to enjoy them as long as I can.

I feel lucky to have experienced such a long "single life".

I don't miss the hangovers or the douchey guys.

But hey...I got some good stories out of it.

So I am laying in bed. Sick sick sick. So ready to be healthy again. As you can see my little feet have been busy busy. Just when I was getting back into a healthy lifestyle of working out regularly and eating better etc I get hit with the MuthaEffin cold. I even started a cleanse (well attempted one before I was seduced by Mexican food)! Oh mama. Now my life is drinking mass amounts of tea until I'm practically drowning and peeing every minute. Binge watching Hulu so hard until my eyes sting like a bitch and I'm ready for a nap (Ps sorry Netflix). It's terrible. Yes I am a baby. But the worst part is that I can't taste good people!!!! FOOD! Which leads to not-so-happy Skylar. I have been a little obsessive about the gym so maybe that is to blame for my sickypoo grossness. It's been worth it though. Been really noticing a difference in my moods and I have been feeling much more confident lately. Luckily, soon I will be feeling back to normal and dead-lifting my little heart out. For now I will continue to drool into this pillow and blow my nose every 10 minutes. Sexy huh guys? Okay that's all for now. Talk to you soooooon! Hopefully with a new recipe next time. Soooo first off, HAPPY HOLIDAYS! I don't know about you guys but I am already aching for a detox from all champagne and chocolate Santas I've been engulfing... but whatever it was worth it! 

This Christmas I traveled to snowy SunRiver Oregon with my boyfriend Justin's family. His dads friend graciously let us stay in her luxurious cabin. I was a bit nervous, not having much experience in the snow. I mean I lived in Portland for two years but that was just rain...snow is not this so-cal girls forte. After much preparation and searching for beanies, long sleeves and snow boots... I was ready.

I flew in a day later after everyone else and landed in Redmond Or about 45 minutes away from SunRiver... Man it was COLD and I was a little worried if I would survive. All the houses and trees covered in blankets of snow, the ground icy... Everyone wearing more clothes than I thought was humanly possible. Toto, I have a feeling we're not in Santa Barbara anymore...

Later, the driver that picked me up from the airport pulls into a snow covered driveway and I almost slip walking my bag up to the door with excitement. I walk in greeted by smiling handsome Justin. Behind him a huge lit fireplace in the middle of the living room, everyone else kneeling over a half completed puzzle, and suddenly I feel safe and happy.

I had my first white Christmas this year with my mr. by my side and it was magical. Skiing at Mt. Bachelor, (I took a lesson then ended up at the bar SHhh, Justin was a pro after 10 minutes! Rolling my eyes**) hot chocolate, quietly reading on the couch with nowhere to be, Christmas presents, fancy home cooked dinners and breakfasts everyone pitching in. It was a dream. I have never been surrounded by so much love and snow. I am very thankful.

Of course by the end of the trip we all were anxious to get home. Oddly enough, dreamlands usually make us want to get back to reality. I did miss my own family this year, but it was nice to experience Justin's family during the holidays. I hope we get to go again, I am determined to race Justin on the slopes... And win! Or maybe simply hangout at the bar eating nachos by myself watching him ski from afar (bliss) hehe 

a few things i learned about my first "snowy trip" :

-long johns. yes, get some. 

-layer layer layer, you're going to look 10 pounds heavier and that's okay. you will be happy & warm.

-get two pairs of gloves. heavy duty ones so you can build a snowman. & an under glove preferably ones that allow you to use your touchscreen on your phone to snap pics.

was having a pretty bummer day... eating chocolate alone on the couch wrapped up in a blanket. sweatpants check, face mask plastered on, being a moody mess. watching hours of anime without a care in the world. cute little kids becoming pro hunters kicking ass and i'm just here yah know... stuffing my face not making moves. then your friend who is a talented photographer shows you some photos he took at work. flattering photos at that.... capturing a happy moment of me making coffee. wow i actually look good... especially when i'm doing what i love. definitely needed that after a weird day solo... so thought I would share. love you chachie

first days off with noooo car. and my friends...it has been glorious. the weather here in sb (what cool kids call santa barbara) is effing beautiful. so pretty much all that is different is that instead of waking up and road raging down the street. I am getting spoiled by morning walks filled with sunshine and a cool fall breeze. damnit.

it has been unreal, for example on my walk yesterday i walked by a customer that works at a massage place and she waved me in. and what??! a free massage? wow. yes please and thank you. i never get massages so I felt very thankful. (shoutout to marissa!) again spoiled. it literally made me feel high as a kite, in the best way. THEN i had lunch with my two favorite people. Surenuh (best friend) & Schmandty (boyfriend). we went to lucky penny, a cute restaurant cafe... 

walking around sb is giving me a new perspective on the town. i feel like I truly get to enjoy what it has to offer. i may not be able to drive to la and getaway for a day but what was a really driving away from? a cool ocean breeze? smiling bikers? flower covered walls? pretty content with my little walks around town. also, i am pretty happy about the extra slice of pizza I earn from all the cardio.

ranty rant: sad sunday & happy matcha

duddddde.

so first off, i changed my blog homepage to "skylarbryce" rather than simply "skyalamode" a while back because not everything i want to write is food related. most of the time i want to bitch and moan about all things related to well, ME. it's my blog... it's a purely selfish after work thing that i have. it may be semi-egotistical, a tad narcissistic but hey we all have that side of ourselves right? i am just a bit more up front about it.

ANYWAYYY, today has been weird. i feel insecure about EVERYTHING. to be totally honest i think it all stems from my parents taking my car away. alright, let's be real. it's not my car, never was. they bought it for me and wah wah they are taking it back because let's face it. i don't pay a damn thing for it besides gas and insurance. so i get it. not mad. i am a grown ass adult and if i have a car it should be one that i earn. just bleh "feels" because dealing with my parents brings up feelings of resentment and issues of my past that i have moved on from and like to keep buried in my "boohoo i am a victim box". i have two legs. i can walk. get a bike. man my butt is going to look GREAAAT. and plus i will be able to eat more and have more posts about ice cream and cake because exercise will no longer be an issue. haha literally loling at myself. I am not trying to sound like "one of those girls" but we all have our shit. we all have things we are trying to get through and this is one of my "things". okkkkkk. 

i truly am not that sad. but sometimes i get a bit dramatic and feel sorry for myself. but then i get over it and feel thankful for all that i have. we all have those days. it happens. just need to look at the positives, like the customer that complimented my hair, or a sweet kiss on the forehead after a rough day....i don't have anything else exciting to say... except i made the best matcha latte i have ever had at work today. see look at that world... movinnnn on uppp. get at me. order an almond milk iced matcha latte with vanilla made by your barista sky and your life will be forever changedddd. unless you don't like green tea (also I guess you don't connect with me and my super interesting asian background....) or you are allergic to almonds thennnn you will die. so don't do that. okay rant over. if you made it through that whole thing you must really like me, or be really damn bored. anyway, glad you did have a good night. i'm going to go eat something and make this "hangry" go away. lots of loveee babes. it's okay to pout sometimes!!

day off vibes: staycation

day offs post payday can be pretty exciting...disneyland, la coffee adventures and finding foodie wonderlands. however, day offs before payday can be pretty uneventful and boring because of how much you spent the week before. let's be honest, i am not a finance expert. i am twenty five and enjoy spending my money on nine dollar pour overs of kenyan coffee. and buying a new outfit every time i feel like "i have nothing to wear!'. i know i know i am a work in progress. but hey! i have someone in my life that showed me today that you can still have the best day off even when you don't have that comma in your bank account.

waking up today next to those big blue eyes, and that handle bar mustache that makes every man jealous. i thought....wow. then i thought poop...i have no clue what we are going to do today. got up and ready. and as soon as i finally got my winged eyeliner right (which most women know is in fact a thing) we were on the road. what could we be doingggg? i cant afford a fancy...well anything right now! well he took me to a coffee shop in the town over, carpenteria. we enjoyed espresso, pastries, an acai bowl and of course a diner mug of houseblend. we sat on a patio next to a really BIG tree in the sunshine. the air cool but the sun still shining. who would have thought that i've been driving hours for coffee and the coffee shop a tad up the 101 north would be just as wonderful without all the fuss of LA. getting coffee together is absolutely special to me because well first we work in coffee (it's how we met) and second because one of our firsts out of town dates was driving and checking out other coffee shops in other cities. nerdy and romantic. perfect.

alright what to do next, well was feeling a bit flustered about silly personal problemas..so OCEAN need to see it. something most cali people do when they need some peace of mind I promise. a little beach path hidden behind a railroad, takes you by some ridiculously large montecito mansions, fences and gates with vines growing up and over. bam. sand for days, glassy water, seagulls, dolphins jumping, ocean breeze and smiling people. gross right? perfectly perfect and everything i needed.

now next thing up....FOOOOD. yes always food. my days off usually revolve around it and that's okay thankyou very much! we go to a hole in the wall but very popular sammie shop "stackys seaside". it was beach themed of course as if the harbor threw up all over it (in a good way). fried chicken sandwich, and a pulled pork too. both split down the middle because i am a best of both worlds type of girl and i oh yes, have a boy who likes to share. (yay yay) both sandwiches were simple and delicious. fries were crispy on the outside yet hot and fluffy on the inside YUM.

it made me so damn happy... sometimes i lose touch with where i came from. i grew up right here in southern california, minutes from the beach. where i can lounge in the sun next to the man that I love, my skin gets all glowy as i watch dolphins swim. i need to remember that i am lucky to have grown up in such a beautiful place, and to keep exploring where i am and not always think about where i should be/could be all the damn time. it's the little things my friends. money is definitely not everything (even though some money is much needed for good espresso, acai bowls and living in santa barbara). but you get what i mean. enjoy life loves. oh and eat your heart out duh.

green chicken enchilada bake

dear, people that might be reading my blog that i never ever update...

sorry i am always MIA but hey i am busy doing things. starting to cook a bit more now because let's be honest when i am taken by a boy i automatically want to cook for him. and hey hey hey it's not because i want to be thaaaat girl. i actually am just a show-offey type, and i'm not afraid to be a bit braggy. i'm not good at too many things, i can't fix a car and i may not be very stylish but i do know my way around a kitchen. working with what i got here people!

so the other day a picked up the newest version of (muhh girl) martha stewart magazine looking for some inspiration. and tah dahhh found a cutie tear out recipe for a green chicken enchilada bake. of course i did my own "busy girl" version of the recipe by using a store bought roast chicken. but it turned out wonderful and in half the time!

i knew this recipe would be sooo tasty, not only because marthas name is on it, but any dish with fresh avocado, salsa AND tortillas has my so cal foodie heart in it's hands. also, i recommend using a cast iron pan if you have one because the edges get perfectly crispy and adds nice texture too. this recipe is insanely easy even after a longgg eight hour shift. or simply lovely for a night in with your boy/lady. ps make sure to hop in your pjs and bust out a fancy six pack to get some extra lovebird points!

Green Chicken Enchilada Bake--

2 cups cooked chicken shredded

12-15oz container green salsa (use your favorite)

12 corn tortillas quartered

3 cups grated jack cheese

s&p to taste

cilantro, avocado, radishes, limes and sour cream for garnish optional

preheat the oven to 350 degrees. shred your rotisserie chicken, toss with salt and pepper to taste, quarter tortillas. now layer ingredients in a 10 inch cast iron pan starting with the salsa, then tortillas, then chicken, then repeat until all three ingredients are used. make sure to end with cheese on top so it gets nice and cheesy. toss into the oven for 25-30 minutes or until cheese is bubbly and golden brown. while the casserole is in the oven prep all your garnishes. when finished. cut, garnish, serve and devour. you can do your own take on this too! feel free to add whatever you like. pasilla peppers or jalapenos would be delicious layered in as well. get creative or enjoy as is. okay okay onto the next thing...

10-18-15 was my favorite girls birthday, serena my little loveeee muffin! i have mentioned her before, she is absolutely thee best. she loves every dog she has ever met, red wine, mcconells ice cream just like me. She treats all her friends with loyalty and kindness and wow she can create the cutest outfit in seconds! she is such a doll so myself and our good friend jenny planned a birthday brunch just for her! filled with cinnamon rolls, a sweet potato fritatta, crispy bacon, pour overs, berries tossed in mint and sugar, grapefruit cocktails and some of serenas favorite people. everything was perfect. everyone brought a little somethin' somethin'. we laughed, ate doughnuts, listened to drake, took polaroids and drank all morning long. i am very thankful that we got to use jennys beautiful home one last time before she had to move. we definitely spread love all over the place. i am very lucky to have such beautiful people in my life. especially you serena! happy birthday to the sweetest/feistiest girl in the world. heres to many more adventures and to being 23 (one of my favorite yearssss). ilysm
